The production of cava with the "champenoise" method consists of filling glass bottles with young wine and adding yeast that will cause a second fermentation.After the necessary time, the bottle must be clarified and the airtight cork must be replaced by the final cork.This operation is called "disgorged"
A demonstration of this process made with classic manual machines can be attended at the Ses Vernes winery.After freezing the neck of the bottle, the “crown” cap is removed and the new cork stopper is fastened with the “muzzle”.Finally the bottle is dressed with a metal capsule and the labels.
