The production of cava with a "champenoise" method consists of filling glass bottles with young wine and adding yeasts that will cause a second fermentation.After the necessary time, the bottle must be clarified and the airtight cork must be replaced by the final cork.This operation is called "disgorged"
In the winery of Ses Vernes you can attend a demonstration of this process made with classic manual machines.After freezing the neck of the bottle, proceed to remove the "crown" cap and put the new cork stopper fastened with the "muzzle".Finally the bottle is dressed with a metal capsule and the labels.
